Beef Straccetti with Balsamic Vinegar

Ingredients

  • Beef: 600 gr.
  • Flour: 30 gr.
  • Extra Virgin Olive Oil: 30 gr.
  • Vegetable broth: 50 gr.
  • Balsamic Vinegar: 20 gr.
  • Arugula: 100 gr.
  • Salt and Pepper to taste

Instructions

Prepare the beef straccetti using beef knuckle or rump.

Flour the straccetti and remove excess flour with a sieve.

Sauté them in Extra Virgin Olive Oil for a few minutes until they achieve a slightly golden crust. Then add salt and pepper and deglaze with the vegetable broth. This way you will get a delicious cream sauce.

Separately, dress the arugula with Oil and Balsamic Vinegar of Modena IGP and create a bed where you will place the beef straccetti. Decorate the plate with some Parmesan flakes.
